We're so proud of Chef Darren Smith of Conway for being selected as one of three chefs to represent the Palmetto State as a 2025 Chef Ambassador.
Chef Smith is the owner and executive chef of Rivertown Bistro and Bonfire, A Smokin’ Taqueria in Conway. Rivertown Bistro offers an elevated dining experience with dishes that highlight Lowcountry flavors through a modern lens, while Bonfire delivers a bold take on barbecue, infusing Southern tradition with global influences. Both restaurants reflect Darren’s commitment to honest food, fair pricing, and creating welcoming atmospheres where guests feel at home.
“I have been cooking professionally for 36 years and have had the privilege of owning Rivertown Bistro for 30 of those years. Throughout my career, I’ve been committed to showcasing the incredible bounty of South Carolina, from the rich harvests of local farms to the fresh seafood from our coastline just miles away. As someone born and raised in South Carolina, I’ve always believed our state is the most beautiful, with its diverse landscapes and world-class products. To be named a South Carolina Chef Ambassador is an honor beyond anything I ever dreamed of. This opportunity is more than a title. It’s a chance to learn from others, build relationships with fellow chefs and farmers, and share my culinary knowledge and passion for South Carolina’s vibrant food culture. Smith appeared on Season One, Episode Three of “Chef Swap at The Beach,” a cooking competition TV series produced by Visit Myrtle Beach and The WorkShop Content Studios airing on the Cooking Channel.
On Jan. 13, 2025, the South Carolina Department of Parks, Recreation and Tourism (SCPRT) announced that Chef Smith joins Jeanne Koenigsberg, executive chef and kitchen general manager of Swamp Rabbit Cafe and Grocery in Greenville and Shuai Wang, chef and owner of Jackrabbit Filly and King BBQ in North Charleston as the three ambassadors.
Chef Ambassadors represent the state through food festivals and other promotional opportunities, sharing South Carolina’s culinary traditions, agricultural heritage, and undiscovered places with the world. They support our state’s farmers by using Certified South Carolina produce, meats, dairy, seafood, and other farm-fresh foods.
Chefs are appointed by the Governor, and the program is run through a collaborative effort by SCPRT and the South Carolina Department of Agriculture (SCDA).

Our world-class culinary talent is highlighted and celebrated through the Chef Ambassador program, showcasing the best of South Carolina chefs, farmers, and locally grown products. As a South Carolina Chef Ambassador, Smith represents the state’s rich culinary heritage, showcasing its diverse flavors and farm-to-table ethos. His dedication to culinary artistry and his community has earned him widespread acclaim and a loyal following.
Previous Chef Ambassadors representing the Grand Strand include Chef Jamie Saskalis of Johnny D’s Wafles and Benedicts and the Tasting Room (2020-2021), Heidi Vulov of Kook & Barrel and Croissants Bistro & Bakery (2018), and Adam Kirby of Bistro 217 and Rustic Table (2017). All three have appeared on Chef Swap.
